I try to eat and cook as vegetarian as possible, but Sean does love him a hunk of meat. So, when I saw this recipe for an citrus herb chicken bake, I knew I had to try it. It was very easy to make. It turned out very lemony, if I made it again I would use less lemon and more garlic! However, it is very healthy. Serve it with rice and veggies for a well rounded meal!
Citrus Herb Chicken Bake

What you need:
1/4 cup olive oil
2 tablespoons minced garlic
2 tablespoons sugar
2 lemons
2 oranges
1 tablespoon italian seasoning
1/2 teaspoon paprika
1 teaspoon onion powder
1/4 teaspoon red pepper flakes
salt and pepper, to taste
1/2 vidalia onion, diced
1 pound chicken breast
¼ cup olive oil 4 cloves of garlic, minced 2 tablespoons sugar 2 whole lemons, one juiced and one sliced 2 whole oranges, one juiced and one sliced 1 tablespoon Italian seasoning ½ teaspoon paprika 1 teaspoon onion powder ¼ teaspoon crushed red pepper flakes Kosher salt and freshly ground pepper, to taste 10-12 pieces (about 4½ lbs.) bone-in chicken parts (thighs and legs are best) 1 medium onion (any kind), thinly sliced 1 teaspoon dried thyme, or fresh chopped 1 tablespoon dried rosemary, or fresh chopped Chopped fresh herbs (rosemary, thyme, parsley), for garnish, optional – See more at: http://recipesofhealthymeals.com/delicious-healthy-mealsherb-and-citrus-oven-roasted-chicken/#sthash.UgQGgH2l.dpuf

What you do:
Dice your onion. Slice one of each the lemons and limes into 1/4 inch thick slices.
In a bowl, mix together olive oil, sugar, spices, and juice of one lemon and one orange.
Cover the chicken with a layer of sliced citrus, then diced onion, then the rest of the citrus. Top with extra italian seasoning.
Place the chicken in a baking pan. Pour the sauce over top and stir or toss to coat the chicken completely.
Bake for 30 to 40 minutes at 350 degrees. Make sure to cut into your chicken and check that it is cooked thoroughly! You may need to cook it a little longer, depending on your oven.
